We are developing a system for cutting sandwiches and other food items (cakes, deserts, cheese, snack bars, prepared meats, pizzas etc) using an ultrasonic blade.

The product passes under a camera which measures the position and orientation of each piece. It is then tracked by the robot as the conveyor moves, and is cut on the fly.

This results in a high throughput system requiring minimal operator intervention and a choice of cuts (halves, quarters, fingers, segments etc). The ultrasonic blade cuts with very low friction, so the aesthetic appearance is excellent and cleaning of the blade is kept to a minimum. This also means that the blade is very effective at dealing with mixed product such as nuts in a relatively soft snack bar.

Cutting on the fly also minimises handling of the product.
